Slow Cooker Beef Tips & Gravy

This is one of our favorite meals to eat for Sunday dinner. Pair it with a side of rice and some biscuits, and you have yourself a complete and delicious meal. You can also just eat it as is, because with the vegetables it makes a complete meal in itself.

What do you need? beef stew meat, carrots, potatoes, onions, beef broth (or water), a beef bouillon cube, cream of mushroom soup, and brown gravy mix.

I start by trimming any extra fat off of the beef tips. Then I salt and pepper them and place them in the slow cooker.

Next, mix together your beef broth, cream of mushroom soup, gravy mix, and beef bouillon cube together in a medium sized bowl and then pour it over the meat in the slow cooker.

Slice your onion into rings and cut your potatoes into chunks. Place the onions, potatoes, and carrots on top of the gravy.

Use a spoon to carefully mix everything in the slow cooker so that the gravy is coating all of the meat and vegetables. Cover and cook on LOW for 7-8 hours.

Note: If your gravy is too thin, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold broth or water in a small bowl and add to the slow cooker. Stir the mixture in with your gravy, cover, and turn the heat to high for about 20 minutes or until the gravy has thickened.

You can make this without any vegetables if you just want the meat and gravy. This recipe is so versatile. I usually just make it with whatever I have on hand. It always turns out so good. I also love to serve it with mashed potatoes if I don’t already have them cooking with it.

You can also add more carrots and potatoes if you would like to. The amount in this recipe was more than enough for Dustin and I to eat and enjoy leftovers. Feel free to adjust the amount of everything to fit your needs.

Ingredients

  • 2 cups baby carrots
  • 1 can cream of mushroom soup
  • 2 (0.87 oz) packets of brown gravy mix
  • 1 beef bouillon cube
  • 1 cup beef broth or water

Instructions

  • Salt and pepper the meat to your liking and put it in your slow cooker.
  • In a medium bowl, whisk together the cream of mushroom soup, brown gravy mix, beef bouillon cube, and the beef broth.
  • Pour the gravy mixture over the meat, and then add your onions, carrots, and potatoes.
  • Carefully mix everything together in your slow cooker so that the gravy is coating everything.
  • Cover and cook on LOW for 7-8 hours.
  • Serve over a bed of rice or by itself.

Notes

If your gravy is too thin, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold broth or water in a separate small bowl. Stir the cornstarch mixture into the slow cooker, cover, and cook on high for another 20 minutes, or until the gravy has thickened.
