If you’re looking for the perfect summer dessert, look no further! This No Bake Berries & Cream Cake has layers of graham crackers, a cream cheese- pudding mixture, and fresh summer berries! Plus it’s a cool dessert to have on those hot, summer days.

It’s a no bake cake, which means you won’t have to crank the oven up and heat your house up. Can I get an Amen from everyone who lives in the hot, humid South?!

With it’s red, white, and blue colors, it’s also perfect to help you celebrate the 4th of July!

What do you need to make this simple dessert? graham crackers, cream cheese, vanilla instant pudding mix, milk, cool whip, strawberries, blueberries, and white chocolate chips.

Just mix and layer as instructed below. Refrigerate it until it’s chilled and the graham crackers become soft. Then drizzle with melted white chocolate when you’re ready to serve. It really doesn’t get much easier than that.

The white chocolate really gives it something extra.

After sitting in the fridge, the cream cheese-pudding mixture will soften the graham crackers, giving it a cake-like texture.

I know it doesn’t look the prettiest after I scooped it out, but I promise the taste makes up for it.

If you don’t like strawberries or blueberries, try switching them out for another fruit you like. We love strawberries and blueberries, and I think they really look pretty on top, especially if you plan on making this for the 4th of July!

No Bake Berries & Cream Cake

This no bake cake is the perfect summer dessert! Layered with graham crackers, fresh summer berries, and a cream cheese pudding mixture, it's simple and delicious!

Ingredients

  • 1 regular sized box of graham crackers About 20-25 sheets of graham crackers.
  • 8 oz cream cheese softened to room temp.
  • 2 (3.4oz) packages Vanilla Instant Pudding
  • 2 1/2 cups milk
  • 12 oz cool whip
  • 3 cups fresh strawberries sliced
  • 1 1/2 cups fresh blueberries
  • 2 oz white chocolate chips

Instructions

  • Beat softened cream cheese until smooth.
  • In a separate large bowl, beat pudding mixes with milk for about 2 minutes on medium speed until blended.
  • Scrape cream cheese into the pudding mixture, and mix until it's completely blended.
  • Genty fold in cool whip, reserving 1/2 cup for the bottom of your dish.
  • In a 9x13 dish, spread a thin layer (1/2 cup) of cool whip to coat the bottom.
  • Layer the graham crackers over the cool whip in a single layer, covering the dish. Break the crackers as needed to cover the edges. I used about 6 sheets.
  • Spread a layer of the pudding mixture over the graham crackers and top it with a layer of strawberries and blueberries.
  • Put another layer of graham crackers over the berries, then the pudding mixture, and top with another layer of strawberries and blueberries.
  • Repeat the graham cracker-pudding-berry layers 1 more time (3 times total), and then you should read the top of the dish.
  • Cover with plastic wrap and refrigerate for at least 4 hours, or overnight until the graham crackers have softened completely.
  • When ready to serve, melt white chocolate chips in a small bowl and use a small spoon to drizzle it over the cake.

Notes

Serves 12-16, making it perfect for a large crowd.
Depending on the size of your dish, the number of graham crackers will vary. I used about 20 sheets, breaking them as needed.
You will more than likely have some of the cream cheese-pudding mixture left, depending on the size of your dish. My 9x13 dish wasn't very deep, so I had enough left to fill a small bowl. I just saved it for us to eat later. It tastes great by itself! 
If there are no instructions on the white chocolate chips package to melt the chocolate, just pour chips into a small bowl, and microwave in 15 second increments (stirring each time) until it's completely melted.

    Wow! That looks amazing! Anything with strawberries, will be a big hit in our house. Being a busy mom, no bake recipes are such a gift. I’m not a great cook myself, but I thank the good Lord he sent me a husband that likes to cook.
