No-Bake Protein Energy Bites

If you’re ever really busy and just need a little snack to get you by until you can eat, these are so easy to make and taste so good. Dustin told me they taste like little treats. I make these for me to snack on in the afternoons and Dustin takes them to work to eat with his breakfast.

What do you need to make these little energy bites? peanut butter, old-fashioned oats, honey, chocolate chips, and flaxseed (optional). I found some gluten free organic flaxseed at a local grocery store, but you can also get some from amazon. It’s not the same kind I have but it’s still organic and good for you.

We only buy local honey and this Gallberry Honey by Sanders Honey Company is so good!

Benefits of honey:

  • combats seasonal allergies
  • can help lower blood pressure
  • improves cholesterol
  • helps soothe sore throat/cough
  • can help lower

I listed flaxseed as an optional ingredient, but there are many great benefits from eating them. If you don’t want to use flaxseed, you can either leave them out completely, or substitute them for chia seeds.

Tip: If you eat flaxseed, it’s better to eat it ground up rather than whole. If you eat whole flaxseed, they could pass through your intestines undigested, which means you won’t get all of the benefits or absorb any of the healthy fats from them.

Benefits of flaxseed:

  • loaded with nutrients
  • rich source of lignans, which may reduce cancer risk
  • rich in dietary fiber
  • may improve cholesterol
  • may lower blood pressure
  • contains higher quality protein
  • aids in digestion and prevents constipation

As much as I love to bake, I love when I can just whip of something quick and be done with it. Just pour all of these ingredients into a bowl and mix it all together.

It should look something like this when you’re done.

Once it’s mixed, cover with plastic wrap and refrigerate for 30 minutes. Once it’s done chilling, roll into approximately 1 inch balls. Lay out a thin layer of oats and chocolate chips onto a cutting board or work surface (I just used parchment paper) to roll each ball in.

After you roll them, be sure to roll them in your hands so that you can pack the extra oats and chocolate chips in better to keep them from falling off.

Store them in the refrigerator until you’re ready to eat them.

Ingredients

  • 2/3 cup creamy peanut butter
  • 1 cup old-fashioned oats plus extra for rolling
  • 1 1/2 Tbsp honey
  • 1/4 cup mini chocolate chips plus extra for rolling
  • 1/4 cup flaxseeds or chia seeds optional

Instructions

  • Mix all of the ingredients in a bowl until completely combined.
  • Cover with plastic wrap and refrigerate for at least 30 minutes.
  • After it's chilled, roll each bite into approximately 1 inch balls.
  • Spread a thin layer of oats and chocolate chips onto a work surface (like parchment paper or a plate) and roll the balls into the mixture. Be sure to press them into the balls so that they don't fall off.
  • Store in the refrigerator until you're ready to eat them.
