Slow Cooker Beef Tips & Gravy

Ingredients

  • 2 lbs beef stew meat trimmed of any extra fat
  • 2 large russet potatoes peeled and cut into chunks
  • 1 onion sliced
  • 2 cups baby carrots
  • 1 can cream of mushroom soup
  • 2 (0.87 oz) packets of brown gravy mix
  • 1 beef bouillon cube
  • 1 cup beef broth or water

Instructions

  • Salt and pepper the meat to your liking and put it in your slow cooker.
  • In a medium bowl, whisk together the cream of mushroom soup, brown gravy mix, beef bouillon cube, and the beef broth.
  • Pour the gravy mixture over the meat, and then add your onions, carrots, and potatoes.
  • Carefully mix everything together in your slow cooker so that the gravy is coating everything.
  • Cover and cook on LOW for 7-8 hours.
  • Serve over a bed of rice or by itself.

Notes

If your gravy is too thin, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold broth or water in a separate small bowl. Stir the cornstarch mixture into the slow cooker, cover, and cook on high for another 20 minutes, or until the gravy has thickened.
