I love one pan meals! They make supper time a breeze when you can just throw everything together to cook at the same time. This recipe takes very little time to prep and tastes so good!

I adapted this recipe from Nichole over from The Salty Marshmallow. I love her recipes. This particular recipe is so versatile. For Dustin and I, this amount was plenty! I made biscuits to go with it and we had a complete meal! We both ate it for supper, and again the next day for lunch. If you are cooking for a family of four or more, you can add a couple more potatoes and another pound of sausage to the recipe, especially if you want leftovers the next day.

All you need for this recipe is smoked sausage, red potatoes, squash, zucchini, olive oil, and a few seasonings you probably already have in your pantry.

Start by mixing all of your seasonings together. Toss the potatoes with half of the olive oil and half of the seasoning mixture.

Spread the potatoes evenly onto a baking sheet lined with tinfoil and bake them for 10 minutes at 425 degrees F.

While the potatoes are baking, mix the remaining olive oil and seasonings with the sausage, zucchini, and squash. I mix them in the same bowl I mix the potatoes in so I don’t have extra dishes to clean.

After the potatoes have baked, pull them out of the oven and add the sausage, zucchini, and squash to the pan. Stir it all together to mix it up while keeping everything spread out evenly.

Place the pan back into the oven and cook everything for another 20 minutes until the vegetables are tender.

Serve immediately! YUM!!!

Ingredients

  • 1 lb smoked sausage
  • 3 medium red potatoes cut into 1/2 to 1 inch cubes
  • 1 medium zucchini
  • 1 medium squash
  • 1 Tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/8 tsp seasoned salt

Instructions

  • Preheat oven to 425 degrees F and line a baking sheet with tinfoil.
  • Mix all of the seasonings together in a small bowl.
  • In a large bowl, mix half of the oil and half of the seasoning mixture with the cubed potatoes.
  • Spread seasoned potatoes evenly onto baking sheet and bake for 10 minutes.
  • While those are baking, slice the sausage, zucchini, and squash into about 1/4 inch thick rounds.
  • Using the same large bowl you mixed the potatoes in, mix the rest of the olive oil and seasonings with the sausage, zucchini, and squash.
  • Remove the pan from the oven and add the sausage mixture to the potatoes. Stir them to mix them up while keeping everything spread out evenly on the pan.
  • Bake everything for another 20 minutes until the vegetables are tender.
  • Serve immediately and store any leftovers in the refrigerator.

Notes

If you have a family of 4 or more, add a couple more potatoes and another pound of smoked sausage. The temperature and cook time will remain the same. You can always add a little more seasonings if you'd like also.
