Sheet Pan Chicken Fajitas

This one pan meal will make dinner time so much easier on those busy days! This has become one of our favorite go-to meals. We love Mexican food, and these chicken fajitas do not disappoint!

What do you need? Vegetable oil, bell peppers, onion, chicken breasts, lime, chili powder, cumin, garlic powder, kosher sea salt, ground black pepper, paprika, cilantro, and cayenne pepper.

Preheat your oven to 400 degrees F and place a rimmed baking sheet in the oven while it heats.

While your oven is heating, mix one tablespoon of oil with the bell peppers and onions in a large bowl.

Carefully remove the baking sheet from the oven and spread the onions and peppers evenly across the pan. Place in the oven and bake for 8 minutes.

Mix all of your seasonings together in a small bowl to make your fajita seasoning for the chicken.

While your vegetables are baking, use the same bowl you mixed the vegetables in to mix the remaining oil with the chicken and fajita seasoning.

Remove the baking pan from the oven and carefully add the seasoned chicken to the pan. Be sure to separate the chicken so the pieces don’t bake/stick together.

Return the sheet pan to the oven and bake for another 15-20 minutes, or until the vegetables are roasted and the fajitas are golden brown. Remove the pan from the oven and squeeze the lime juice over the top.

Serve with desired toppings. We personally love shredded Queso Quesadilla cheese, sour cream, and guacamole.

Tips:

  • Cut the chicken against the grain. This will give you more tender chicken strips for the fajitas.
  • You can substitute grapeseed or avocado oil in place of the vegetable oil if you would like to use a healthier alternative.

These are so good served with a side of Mexican Style Rice. They would also be good served on tortilla chips if you want some fajita nachos!

Ingredients

  • 3 Tbsp vegetable oil divided
  • 2 large bell peppers, seeds removed (I used 1 green and 1 red) cut into 1/4 inch slices
  • 1 onion thinly sliced
  • 1-1 1/2 lb chicken breasts cut into 1/4 inch slices
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp kosher sea salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried cilantro
  • 1/8 tsp cayenne pepper optional
  • 1 lime
  • fajita flour tortillas

Instructions

  • Preheat oven to 400 degrees F.

  • In a large bowl, toss 1 Tbsp of oil with the bell peppers and onions. Carefully remove the pan from the oven and evenly spread onions and peppers across the pan. Place in the oven and bake for 8 minutes.
  • Mix all of the seasonings together in a small bowl. In the same bowl you mixed vegetables in, mix chicken, homemade fajita seasoning, and the remaining oil together.
  • Remove vegetables from oven and carefully add the seasoned chicken to the pan. Be sure to separate them so that they don't bake/stick together.
  • Return the pan to the oven and bake another 15-20 minutes, or until the vegetables are roasted and the chicken is golden brown.
  • Remove from oven, squeeze lime juice over the top, and serve with desired toppings.
