Sheet Pan Chicken Fajitas

This one pan meal has flavorful chicken, onions, and peppers to give you a simple, delicious meal on any busy day.

Ingredients

  • 3 Tbsp vegetable oil divided
  • 2 large bell peppers, seeds removed (I used 1 green and 1 red) cut into 1/4 inch slices
  • 1 onion thinly sliced
  • 1-1 1/2 lb chicken breasts cut into 1/4 inch slices
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp kosher sea salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried cilantro
  • 1/8 tsp cayenne pepper optional
  • 1 lime
  • fajita flour tortillas

Instructions

  • Preheat oven to 400 degrees F.
  • Place a rimmed baking sheet in the oven while it heats so it will be nice and hot.
  • In a large bowl, toss 1 Tbsp of oil with the bell peppers and onions. Carefully remove the pan from the oven and evenly spread onions and peppers across the pan. Place in the oven and bake for 8 minutes.
  • Mix all of the seasonings together in a small bowl. In the same bowl you mixed vegetables in, mix chicken, homemade fajita seasoning, and the remaining oil together.
  • Remove vegetables from oven and carefully add the seasoned chicken to the pan. Be sure to separate them so that they don't bake/stick together.
  • Return the pan to the oven and bake another 15-20 minutes, or until the vegetables are roasted and the chicken is golden brown.
  • Remove from oven, squeeze lime juice over the top, and serve with desired toppings.

Notes

Tips:
  • Cut the chicken against the grain. This will give you more tender chicken strips for the fajitas.
  • You can substitute grapeseed or avocado oil in place of the vegetable oil if you would like to use a healthier alternative.
