Mexican Style Rice
If you have trouble coming up with a good side dish to serve up with your favorite Mexican food, look no further! This Mexican Style Rice is the perfect side. It’s my go-to recipe when I’m looking to add something extra to our meal. My favorite things to cook it with are: chicken or steak fajitas, nachos, and enchiladas. It would also be great to eat with tacos or quesadillas! YUM! You can eat it as a side or even a topping.
Here’s what you need: long-grain white rice, chicken broth, butter, salsa, garlic salt, and cumin.
I have tried different kinds of salsa in this recipe, and the one shown above has been our favorite! It’s our favorite store bought salsa to dip tortilla chips in. I always have extra in the pantry so we never run out. It’s the Pace Restaurant Style Salsa, original recipe. We don’t like our salsa chunky, and this one is just right. I also love these Pioneer Woman measuring bowls. Dustin got them for me for my Mother’s Day gift last year. I use them for everything, including my salsa when I want it with some chips.
This rice couldn’t be any easier to make! Just mix all of the ingredients together in a pot on the stove. Bring it to a boil, then cover and reduce the heat to low. Simmer it for 25 minutes. Remove it from the heat and let the rice stand with the lid on for 10 minutes. Fluff rice with a fork and serve!
When I was pregnant with Austin, Mexican food was one of my biggest cravings. We would go to the local Mexican restaurant here 2-3 times a week sometimes, and I would always order the exact same thing; a beef burrito with rice and beans. I had to have the restaurant style Mexican, not the fast food version (although I wouldn’t turn it down if it was offered). I never got sick of it. This Mexican style rice is not the exact same as the restaurant, but it’s full of flavor and has a great taste.

Mexican Style Rice
Ingredients
- 1 cup uncooked long-grain rice
- 2 cups chicken broth
- 1 Tbsp butter
- 1/2 cup salsa
- 1 tsp garlic salt
- 1/2 tsp ground cumin
Instructions
- Combine all ingredients into a medium, non-stick skillet or pot.
- Bring to a boil, then cover and reduce heat to low.
- Simmer for 25 minutes.
- Remove from heat and let stand with the lid on for 10 minutes.
- Remove lid, fluff rice with a fork, and serve!
