Mexican Style Rice

The perfect side dish to any Mexican inspired meal!

Ingredients

  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • 1 Tbsp butter
  • 1/2 cup salsa
  • 1 tsp garlic salt
  • 1/2 tsp ground cumin

Instructions

  • Combine all ingredients into a medium, non-stick skillet or pot.
  • Bring to a boil, then cover and reduce heat to low.
  • Simmer for 25 minutes.
  • Remove from heat and let stand with the lid on for 10 minutes.
  • Remove lid, fluff rice with a fork, and serve!

Notes

Best served with fajitas, burritos, enchiladas, nachos, or tacos as a side dish and/or topping.
